Summer 2025 Menu: Sourced with Love

Crystal Springs Cheeses

The Beyer family have been operating Crystal Springs Dairy Company since 2005. Located in beautiful Coalhurst, AB, they have prided themselves in bringing Albertans locally sourced, impeccably made cheeses such as their Gouda, Havarti and Cheddar varieties all crafted from Alberta dairy cows.

Crystal Springs is well known for it high quality artisinal line of cheeses. All their products are made with milk from Alberta dairy cattle. Their Bles-Wold line is made exclusively with A2 milk from their own (tested and confirmed) herd of cows that live happily at their family-owned dairy farm, located on the same property as their production facility.

Crystal Springs Cheeses is located approximately 320km from the Banff Market, near Lethbridge, Alberta.

This year, you can enjoy Crystal Springs’ Medium Gouda, Sundried Havarti, and Roasted Pepper and Garlic Cheddar at the Banff Farmer’s Market.

The Veggie Cup happily represents all of Crystal Springs’ cheeses.

The Medium Gouda and The Roasted Pepper and Garlic Cheddar will be showcased in our Classic Cup and The Sundried Havarti will be showcased in our Banff Cup.

Gouda, originally Dutch, is a versatile, semi-hard cheese with a mild, creamy and slightly nutty flavor.

Havarti is a Danish semi-soft cheese known for its creamy texture and mild, buttery flavor, often with a subtle tang or nuttiness.

Cheddar, originally English, and one of the world’s most popular and consumed cheeses, is known for its versatility. Most cheddars in North America are dyed orange with annatto. Our medium cheddar offering is showcased in the traditional pale yellow and has a flavor profile of creamy yet mildly sharp.

SOLETERRA D'ITALIA

Soleterra D'Italia salamis, hams and dry-cured meats are made using authentic recipes from the Simonini family of Italy, the highest standard processing techniques and pork from Alberta based Sunterra Meats.

Soleterra is approximately 207km away from the Banff Market, just north of Calgary, Alberta.

Soleterra d’Italia brings together generations of passion and expertise to deliver salamis, hams and dry-cured meats of uncompromised quality. Gluten-free and lactose-free.

This year, you can enjoy Soleterra’s Prosciutto, the Spicy Salami and the Finnochio (Fennel) Salami on Banff Bites’ Summer Menu.

Sunterra also operates a highly successful greenhouse, providing year round fresh produce to Calgarians and surrounding area. Banff Bites will be showcasing Alberta’s first- and only- commercially greenhouse grown strawberries!

EVERY jar of BC Brine is hand packed in Falkland, BC

The producers of BC Brine started their pickling adventure in 2018. They use simple ingredients: Vinegar, Filtered Water, Salt, Fresh Produce, Garlic and Spices.

Every jar is handpacked onsite to ensure the highest of quality control and care goes into every crunchy bite of BC Brine’ pickled goods.

This summer, we are thrilled to showcase their dill pickles, beets and carrots on our menu.

Pickled produce plays a key role in all of our charcuterie cups. They cut the richness of fatty meats and cheeses. They cleanse the palate, refreshing your taste buds between bites. They also add texture and enhance flavors, making them a small addition with a big impact!

BC Brine

Sylvan Star is celebrating their 6th Generation of cheese maker, bringing perfected age old techniques from the Netherlends. They have won many awards for “Canada’s Best Gouda” and have a variety of ages and offerings at their farm shop between Red Deer and Sylvan Lake. The milk used in their cheese comes straight from their own cows, which are raised and nurtured on their farm, resulting in a genuinely farm-to-table cheese experience.

This year’s Banff Bites Menu is proud to showcase Sylvan Star Smoked Gouda, available in our Banff cup. The Banff Cup is defined by this cheese. The Prosciutto and Salami enhance the savory depth. The briny tang of the dill pickles and beets cut through the richness and the strawberries add a delicious sweetness to balance.
